Most Popular Northern Dishes of Iran

The Iranian cuisine is very diverse; however, the northern dishes of Iran are exceptional for tourists. The cuisine varies from region to region. In Mazandaran province, people are fonder of seafood and spices for it is alongside the Caspian Sea, a coastal area where locals can effortlessly catch fish, and in Gilan Province, a mountainous region, indigenous herbs and veggies are used for the main course. Here are some delicious northern dishes you should try while visiting the mesmerizing places in the northern region of Iran!

Naz Khatoon

Naz Khatoon is an original and fancy side dish famous in the Mazandaran Province. It is a Torshi mixture made with special herbs, potatoes, and eggplants. A simple recipe that is excellent for those who enjoy sour foods. Naz Khatun contains garlic, grated onions, verjuice, condiments, cinnamon, vegetable oil, barbequed eggplants, and pomegranate paste for an additional sourness. Dried mint, angelica, basil, and fresh coriander are crushed and combined with the above ingredients to create an unforgettable taste. The mouth-watering Torshi is garnished with chopped or pickled carrots and garden-fresh coriander. The side dish is mainly accompanied by Adas Polo “rice and lentils” or Shami kebab, a mixture of beef and nuts.

Baghali Ghatogh

Baghali Ghatogh is a delicious stew made with dill, kidney beans, and eggs. The Baghali Ghatogh is also served with sticky rice known as kateh in Persian, which is very common in the Northern dishes. Fresh Garlic and seasoning such as pepper, salt, and turmeric are added to the stew for a flavorful taste. The recipe for the stew is distinct between the two Northern Provinces. In Mazandaran, Baghali Ghatogh is made with kidney beans, and in Gilan, it is cooked with cranberry beans. Nonetheless, the Gilani recipe is mostly dished out in late summer, for the beans are supplied during this month.

Aghouze Messeama

If you’re looking for an extraordinary dish, make sure to try Aghouze Messeama, one of the northern dishes of Iran. Aghouze Messeama is a popular and healthy meal in Gilan Province, made with duck, pomegranate paste, and walnuts. Pomegranate seeds and walnuts are grinded and combined with the mixture of duck and the pomegranate paste, followed by salt, pepper, sugar, turmeric, fried onions, and butter or oil. The stew mixture is served with rice or torshi, which is simply pickled vegetables commonly used in Middle Eastern cuisines as a side dish. Fried Eggplants are set out by the plate as well for an extra relish. This dish is also made with goose instead of duck, depending on the different regions.

Mirza Ghassemi

Mirza Ghassemi is named after Mohammed Qasim Khan, the Northern governor of Rasht, who was the first to invent this famous traditional savory in the 19th Century. Mirza Ghassemi is served as both an appetizer and the main dish. It is a dip cooked with grilled eggplant, tomatoes, spices, and eggs and helped with rice or bread. The majority of provinces enjoy the dish with freshly baked bread. Garlic, salt, pepper, oil, or butter is mixed with the three main ingredients to make the delicious roasted eggplant dish. In some areas, grilled zucchini is used instead of eggplants to make Kadoo Ghassemi. ‘Kadoo’ is the Persian word for Zucchini. The dish can be decorated with basil, mint, or other fragrant herbs, as well as onions or sliced red radish.

Garlic cloves and leaves are what make this stew aromatized. It is a simple and easy dish to make, requiring boiled eggs, salt, pepper, turmeric, and oil with the cloves prepared and then fried together. Gilani women cook Sirabij with Gija Oil, also known as Gijavash, a local vegetable oil perfect for this unique stew. Sirabij is served with bread or rice, along with fish or chicken and yogurt.

One of the most common leafy green vegetables in Northern cuisine is Spinach. A healthy and nutritious plant, recommended by many health experts. Spinach Maerji is the perfect meal for individuals with low iron and a weak immune system. Made with lentils, garlic cloves, sour pomegranate paste, spice, turmeric, salt and pepper, and animal fat or butter. Xavi in Iran

Iran Passport Stamp, the Reason for Xavi’s Absence in Barcelona’s America Tour

Xavi cannot accompany his team on the trip to Miami due to his passport problem, the Iran passport stamp. His club has informed Xavi that America did not give him a visa due to his numerous trips to Iran. As a player or a coach, Xavi traveled to Iran many times in the past years. He was last in Iran on May 19, 2019. According to the laws of the United States, those who have entered Iran need a special permit to enter the United States.

In order to avoid such inconvenience when traveling to the United States, you have two options. Firstly, you can simply ask for your visa to be issued on paper. Secondly, you can skip your Iran passport stamp. Foreigners’ passports will not be stamped in Iran to ease entry rules and to counter the United States’ bilateral sanctions against Iran. The resumption of sanctions against Iran began in May when the US withdrew from the 2015 Joint Comprehensive Plan of Action known as the Iran nuclear agreement. One of the consequences of Trump’s sanctions against Iran is that those who travel to Iran might face some difficulties afterward. To reduce tourists’ concerns about US sanctions, the Iranian vice president announced that foreigners’ passports would not be stamped in Iran.

Therefore, foreign tourists will have the opportunity to travel to Iran, enjoy the company of its hospitable people, visit its ancient cultural attractions, and have no problem traveling to the United States. As an Iranian tour operator with 30 years of experience operating incoming tours to Iran, we have been honored to welcome many tourists to Iran in the past years. We like to shed light on the issue in this article so that you can make your call to travel to Iran and other countries unafraid.

live tours - Iran Doostan

Iran Doostan turns to live tours during the COVID-19 pandemic

2020 has been a completely different year so far, we have had experienced a tough time of isolation and staying at home, travelers and adventurers had rarely been able to travel and many tour operators have faced a recession.
As a pioneer tour operator that has been involved in incoming tours to Iran and providing the tourists with amazing memorable experiences, Iran Doostan started to address the issue through having brainstorming sessions, market research, and email marketing to exchange ideas with the partners making them aware of what we are doing. These newsletters were mainly focused on successful benchmarks during a similar crisis before and also the role of technology.

Our managers at Iran Doostan strongly believe that the tourism industry is experiencing a turning point, it is not simply a matter of the lockdown situation; there will be major changes to the travel industry after the pandemic as well. So, the industry is in need of creative solutions, and that was how our idea of “live tours” was born. However, we know that real travel experiences cannot be replaced by live ones, that is why we have thought of special live tours that may never happen even in your real traveling to Iran!
In November 2020, Iran Doostan launched its first live tour, it was a culinary tour with an experienced tour guide sharing some Persian classic recipes. Many enthusiastic visitors joined us and loved the tour, they can talk to the tour guide, ask a question, tell their ideas, we even welcome their ideas for future tours!

The second live tour was to present a private ceramic museum which is quite unknown to the visitors in Iran and even the Iranians! A lovely and cozy place run by an artist couple that truly came to amaze the visitors.
You can watch the ceramic museum tour online here.

The next live tour in Iran took place in a traditional ceramic factory, which was a 700-year-old business family with a positive atmosphere created by the lovely colorful ceramic objects around. This tour was also loved by many visitors.

You can join us to watch some moments of virtual tours held by Iran Doostan.

Considering the successful experiences of our live tours taking place in special places such as a traditional factory or a private museum that is more like a gorgeous garden, Iran Doostan now believes that experiencing such tours in a country with uncountable tourism attractions would not be easily possible in real tours and we have decided to expand this market for the enthusiastic visitors. To consult us regarding any type of tour to Iran, please do not hesitate to send an email to info@idt.ir.

Mohamadali ashraf vaghefi

Coronavirus and the threats to the future of tourism in Iran

Mohammad Ali Vaghefi, the vice president of the Iranian Tour Operators Association had an online interview with Marketing and Advertising Manager at the Ministry of Cultural Heritage, Tourism, and Handicrafts discussing the state of domestic and international tourism in Iran.

He admitted that 90% of the 2020 incoming tours to Iran have been canceled So far, and there is a high possibility of canceling the remaining 10%. However, many foreign agencies are already asking Iranian agencies for their travel package price in 2021. Many Iranian hotels, transportation companies, and travel agencies including Iran Doostan have predicted the requirements for traveling to Iran in this situation, and we are prepared to welcome our dear tourists, individually or in a group, considering all health protocols.

Mr. Vaghefi’s analysis of the situation, as a manager with more than 30 years of experience, is that domestic travel in Iran will be established first, and then demands in the travel sector will be raised by tourists with private vehicles. Many tourists prefer to go camping in nature and stay in tents or even rent a villa and disinfect it instead of booking a hotel room.

Regarding international travel, he believes that by resuming travels, there will be long lines for health control. Sanitary products and alcohol-based stuff will be added to the accessories that the tourist must hold. Passengers are required to receive travel insurance. The number of visitors and the number of visits to historical places and museums will decline, and by observing the slightest sign of illness, the person is excluded from the tour.

He continued: “We expect that demand for nature tourism will grow, and traveling in a group will be less frequent. Our tourism partners in other countries are already asking for a price of groups of one to eight people.” As a result, with regard to the health protocol, the cost of travel services, including plane tickets will increase and travel will become a luxury service.

At the end of the discussion Mr. Vaghefi asked for the government’s help to this sector, and

expressed his concerns this way: “In this situation, the government should contribute to the tourism industry.” It is important to keep the industry alive, the most important thing that should be considered is to keep the employees of the sector. It may take about four years for us to find a replacement for the specialized workforces that have left the profession.

Waste Separation at Source: The first step to go green

Have you ever wondered what will happen to the unseparated wastes? Can it be recycled? Well, the very sad answer is; No! Contaminated waste, paper, or plastic bottles that are smeared by food leftovers or other unsorted waste will cost more to be processed and recycled. So, in many cases, the contamination will not allow the plastic and paper to be recycled and they will, unfortunately, end up in a landfill. Waste separation at source is the key factor to avoid such contamination and maximize the recovery of useful waste. Read more
